Baked Pandan Matcha Mochi Donuts

Do you love baked mochi donuts? These baked pandan matcha donuts are so easy to make and delicious. They are topped with pandan glaze and shredded coconut. Perfect for breakfast, or afternoon snack!

Pandan Match Mochi Donuts

Yield about 11-12 donuts
  • 3 tablespoons unsalted butter, melted
  • 6 tablespoons white granulated sugar
  • 2 eggs room temperature
  • 1 1/4 cups coconut milk
  • 2 teaspoons pandan natural flavoring from Halo
  • 2 cups sweet rice flour
  • 2 teaspoons baking powder

Steps

  1. Preheat oven to 350F. Prepare two 6-donut baking pans. Spray them with oil.
  2. Melt the butter in the microwave.
  3. In one large bowl, mix the melted butter with all wet ingredients.
  4. In another bowl, mix sweet rice flour, baking powder, and matcha powder together. Whisk them until combine.
  5. Add the wet ingredients to the dry ingredients and mix until combined.
  6. Put the batter into a piping bag. Pipe it into the donut pans.
  7. Bake for 10-12 minutes until a toothpick comes out clean.
  8. Let donuts cool in the donut pan for 10 minutes. Transfer to a cooling rack to cool completely.

Pandan Glaze & Shredded Coconut Topping

Steps

  1. Combine coconut milk, powdered sugar, and pandan flavoring in a bowl. Mix until combined. Set aside.
  2. Dip the donuts into the glaze and then top with shredded coconut.
