If you love ube, you will love this ube Russian buttercream! It is so creamy and full of ube flavor.
Ingredients
- 1 can of ube sweetened condensed milk
- 2 sticks (8oz) of unsalted butter
Another way to make if you cannot find ube condensed milk in our local Asian grocery stores.
- 1 can of sweetened condensed milk
- 1-2 teaspoons of ube extract
- 2 sticks (8oz) of unsalted butter

Assemble
- Use a whisk attachment in the stand mixer on medium speed, mix the butter about 5-8 minutes until it is creamy and pale in color.
- Add the condensed milk into the butter in 2 additions. Use low speed to mix it together.
- Turn the speed up to high once the butter and milk is incorporated. Mix on high about 5 minutes until it is creamy and fluffy.
- Ture the speed down to low to reduce bubble in buttercream for another 5 minutes.
- Transfer the buttercream to a piping bag and pipe the swirl on the top of the cupcakes or frost a cake. Enjoy!
Storage: Once prepared, the buttercream needs to be refrigerated up to 5 days in the fridge.
