Ube Cake with Ube Russian Buttercream

This ube cake with ube Russian buttercream is perfect for spring and summer. They are light, fluffy and not too sweet! It is quick and easy to make!

Wet Ingredients

  • 3 large eggs room temperature
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1-2 teaspoon ube extract
  • 1/2 cup milk room temperature

Dry Ingredients

  • 1 ½ cup all purpose flour
  • 1 teaspoon baking powder
  • 1/4 tsp baking soda
  • ½ teaspoon salt

Steps

  1. Preheat the oven to 325°F. Spray oil or prepare four 4-inch round cake pan. Set aside.
  2. In a large mixing bowl, whisk all dry ingredients together and set aside
  3. In the bowl of an electric mixer, beat the butter at medium speed, for about 1 minute.
  4. Add the sugar and beat for another 1 to 2 minutes, until creamy and fluffy. Scrape the sides of the bowl as necessary.
  5. Add the eggs, one at a time, mixing each egg until combined before adding the next.
  6. Add the ube extract and stir to combine.
  7. Add half of the milk and mix.
  8. Now add half of the flour mixture to the bowl and mix to combine.
  9. Pour the rest of the milk in and stir.
  10. Add the last bit of flour and mix to incorporate. I like to finish mixing with a spatula instead of the mixer, in order to not over-mix the flour with the batter which could result in dry and tough cupcakes later.
  11. Pour the batter evenly onto the prepared cake pans.
  12. Bake for 15-18 minutes or until a toothpick comes out clean.
  13. Let cool for about 15 minutes in the tray, then remove and transfer to a wire rack to finish cooling.

Assemble

1. Place first cake layer on a cake turntable.
2. Pipe the ube buttercream on cake layer
3. Put the second cake layer on top and pipe buttercream
4. Repeat the step of the top layer.
5. Crumb coat the cake. Then refrigerate for 20-30 minutes. Decorate it to how you like it. Have fun & enjoy!
6. Final coat the cake. Decorate it to how you like it. Have fun & enjoy!

Storage: Once prepared, the cake needs to be refrigerated up to 5 days in the fridge.
